cake



Following on from this weeks 'this is...' I just had to share this recipe with you. I couldnt find it at the time, but searched my files at work today & voila! there it was. YAY!
Its my friends mums - i would like to say 'secret' recipe even though its not! - & its the best chocolate cake I have ever eaten.
Seriously, when i get married this is the cake I want!

black devils food cake

1 cup of strong coffee - hot (use about 1 Tbsp of coffee powder)
1/2 cup cocoa

Dissolve cocoa in the hot coffee. Whisk to remove any lumps. Cool.
This can be made the night before, or a few hours earlier so it has time to cool.

125gms butter
1 1/4 cup castor sugar
2 large eggs
1 tsp vanilla essence
1 1/2 cup flour
1/4 tsp baking powder
1 tsp baking powder

Cream butter & sugar. Add eggs one at a time, beat between each egg addition (it may curdle a bit but dont worry, it still turns out fine!)
Sift together dry ingredients.
Add essence to eggs, then add dry ingredients alternatively with cocoa/coffee mixture.
Bake at 180c for about 50 minutes, may take longer or shorter depending on oven and cake tin size.

Ganache Topping

100ml cream
1 1/2 tsp instant coffee
150gms dark chocolate
approx 3tbsp tia maria

Gently heat cream & coffee powder until dissolved. Add chocolate & remove from heat, stir to melt, cool until thick.
Brush top of cake with Tia Maria & ice. Can brush with margarine before icing the cake as this helps the icing stick.

And would you believe it... I was looking for an image for this recipe & found this amazing one over at design sponge, - it just happened to be for devils food cake!! its a sign - that this really is the best cake ever...
