Ohhhhh... new season Rollies are almost here!! I know which ones Im getting! Just need them to arrive in time for my trip :)
I bet this recipe smells and tastes like summer. I can't wait to try it.
Coconut Pineapple Banana Bread
1/4 cup unsalted butter, softened
1/4 cup sugar
2 large ripe bananas
1/2 cup coconut milk
2 cups all purpose flour
1 teaspoon baking soda
pinch of salt
1/2 cup crushed pineapple
1/2 cup coconut flakes, and a little extra for sprinkling on top
Preheat oven to 180c. Spray a little vegetable oil into each pan, line with baking paper, and set aside.
With an electric mixer, beat together the butter, sugar, coconut milk and mashed banana in a medium size bowl.
In a seperate bowl, sift together the flour, baking soda and salt, then slowly add to the banana mixture.
Fold in the coconut and pineapple.
Spoon into pans and top with coconut. Bake for about 30 minutes, or until skewer, inserted in centre, comes out clean. Allow to cool a little on a wire rack, then enjoy!

My only comment is that it took longer than 30 minutes to bake - more like 50min to 1 hour. But that might just be my oven :)
